My husband LOVES nuts. So much so that whenever I make a dessert, which, to be honest, isn't often, he always asks for double or triple the nuts that the recipe calls for. Years ago, I decided that as a treat, I would eliminate the 'extras' - you know, like chocolate chips, and give him just nuts and see how he liked it.
WELL... he LOVED them! So, every rare now and again, because, I almost never make desserts, I make him some of his favorite cookies. Today is one of those days.


I bake at 375 F for about 12 minutes. I like them browned lightly on top. Makes about 3 dozen, when dropped by the spoonful onto the baking pan.
Here is my recipe for Nut Cookies
2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
2 sticks (1 cup) butter , softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
3 eggs (or 2 large, my chickens lay sort-of smallish ones)
3-4 cups chopped nuts
Mix everything together (I use my kitchenaid stand mixie) adding the nuts last, after the batter has mixed thoroughly. For nuts, I usually just drop whatever I have in the house into a zip loc bag and smash it all to bits with a rolling pin. For today's recipe, I used almonds, pecans, walnuts and cashews. Sometimes I have hazelnuts or macadamia nuts on hand and will add those too.
