I am excited to share my way of cooking with you all! 

INDIAN + for Americans (and other mild palates)

Here you will be able to find tried and true recipes for Indian food (amongst others) that are full of flavor and spices, but lack any heat (or what Indians like to call, Mirch).  You may find some peppercorns (which I find spicy) and a pinch of chili powder (hot!) but in all cases, these will be optional, and in amounts that my super mild palate can handle.  These would be for added flavor only,  to subtly enhance the other ingredients.  These recipes are suited to our tastes, but I have found over the years that most of my friends will happily eat what I make, so I assume you will like it too!

What qualifies me?  Absolutely nothing, however, I am married to an Indian man, and have been cooking with and for him for almost 20 years.  His mother and sisters have also guided me through learning their authentic recipes, handed down many generations.  From there, I have learned to stay FAR away from packet meals and spices as they are simply too hot for me to eat.  I also have trouble in restaurants, and have had to recreate my favorite dishes at home for this reason.

I hope you enjoy my culinary walk through Indian cuisine.  The + is so that I don't limit myself to only Indian, as I also cook many other ethnicities, such as Thai, Mexican, Spanish, Ethiopian, and others.

https://www.vahrehvah.com/   is one of my best kept secrets.  While the chef is a little cutely dated, his recipes shine and are easy to follow.  He even has youtube videos with fabulous explanations.  Some of our favorite recipes include: Matar Paneer, Panner Butter Masala , Chicken Korma,  or Chicken Tikka Masala.

Madhur Jaffrey, and her cookbook "The Taste of India" are a fabulous edition to your home kitchen.  You can find quite a lot of her recipes on BBC's recipe website.  A few of my favorites from her include Kheer (Indian rice pudding)  and Vegetable Pulao.
